Easy Dinner Night
I used to make this all of the time and had forgotten all about it. Last night I opened my fridge to see it almost bare. Tomorrow is grocery shopping day and as the boys get bigger a full fridge does not last very long.
This is a great one pan dinner and you usually have all of the ingredients on hand. I have never been one to follow a recipe exactly (just like my decorating). So this is a recipe I have tweaked along the way. I am in no way a professional cook, just a mom that needs to get dinner on the table quickly.
Arroz Con Pollo
Olive Oil
Salt & Pepper to Taste
1 clove garlic
1 small yellow onion
1 -2 lbs Chicken (raw) Tenders Cubed
1 Pkg Carolina Yellow Rice (Any Boxed Rice - Rice A Roni)
1 1/2 Cups of Water
3 - 4 Plum Tomatoes - diced
1/2 Cup Frozen Peas
1/4 Cup Green Olives Sliced (Optional)
In a skillet on medium heat add a splash of olive oil. Add your yellow onion and let it sweat for 2-3 minutes. Add the garlic and then add the cubed chicken. When the chicken is almost cooked through 5-8 minutes add the packaged rice (if you use Rice A Roni add the seasoning packet as well). Then add 1 1/2 cup water - stir and cover for approximately 15 minutes or until your rice is almost done. Add your tomatoes, frozen peas and olives. Cook for an additional 2-4 minutes. That is it!
You can always double the recipe if you are feeding a bigger group.
